How it will work:

Authors participating will post their giveaway, gardening tip, recipe or both on their blog, beginning April 10th and leave their contest open through the 19th.  You will have 10 days to enter each individual authors contest and then submit your entry for the grand prize!!

My favorite recipe, this week, is Tomato-Pesto Frittata.

  • Prep Time 10 minutes
  • Total Time 25 minutes
  • Yield Serves 4


  • 8 large eggs
  • 1/3 cup basil pesto
  • Coarse salt and pepper
  • 1 cup shredded fresh mozzarella (4 ounces), divided
  • 1 teaspoon olive oil
  • 2 small tomatoes, thinly sliced


  1. Preheat oven to 425 degrees. In a large bowl, lightly beat eggs. Stir in pesto, 3/4 teaspoon salt, 1/4 teaspoon pepper, and 3/4 cup mozzarella. In a 10-inch nonstick skillet, heat oil over medium-high. Add egg mixture and cook, stirring occasionally, 1 to 2 minutes. Arrange tomatoes in a single layer on top and sprinkle with remaining mozzarella.
  2. Bake until puffed and center is just set, 10 to 12 minutes. Let sit 5 minutes; run a rubber spatula around edge and beneath frittata before transferring to a cutting board. Cut into wedges and serve.

My personal take on this recipe...
I liked my Frittata at room temperature and I used feta cheese and heirloom tomatos on the top, with a basil leave to decorate.

  5. I love cucumber salad, Mayo with apple cider vinegar salt & pepper for the dressing... Big hit in my house... easy and quick to make and nice side for hotdogs or grilled chicken.

  8. Spring is bloom and I love the flowers that come along with it. The warm weather, the happy people, the blossoming of roses and sunflowers. Sunflowers have to be my favorite flowers. They are so happy reaching towards the sky. Their petals are like eyelids opening wide to look upon the great blue sky above. My mother makes the best cheesy cauliflower soup that I adore in the springtime. It's thick and creamy and I could easily eat gallons of it!
